The dish is made with dried catfish (pladuk, Thai: ปลาดุก) which has first been shredded and then deep fried until crispy. It can be topped with a salad made from thinly sliced green (unripe and tangy) mango, shallots, fish sauce, chillies, lime juice, sugar and coriander leaves, or as seen here, the salad served on the side to prevent the crispy fish from turning soggy.
It can be eaten as a snack, a starter, or as one of the main course dishes of a full meal.
